Hearty Southwestern Turkey Chili

  • 1 lb. ground turkey
  • 2 tsp minced garlic
  • 1 cup chicken broth
  • 1 can pinto beans, rinsed and drained
  • 1 can black beans, rinsed and drained
  • 1 cup your favorite salsa
  • ⅛ cup tomatillo salsa
  • 1 can corn kernels, drained (or 1 cup frozen)
  • 1 tsp ground cumin
  • ½ tsp chili powder
  • 1 pkg Spanish Ready Rice*
  • Shredded cheddar cheese
  1. In a large stockpot over medium-high heat, brown the turkey; drain.
  2. Add garlic and saute until fragrant. Pour in chicken broth and reduce heat to medium.
  3. Add pinto and black beans, regular salsa, tomatillo salsa, corn, cumin, and chili powder.
  4. Cook rice in microwave, according to package directions. Add to turkey mixture and simmer for 5 minutes and heat through. Serve with shredded cheese and enjoy!
*If Spanish Ready Rice isn't available, you can use a regular package of Spanish rice. To make your life easier, cook it according to package directions before making this chili. I'd suggest using just half of the cooked rice for this recipe.
