Beef Lo Mein

  • 1 8-oz package spaghetti
  • 4 cloves garlic, minced (about 4 tsp)
  • 1-1/2 tsp powdered ginger
  • 6 Tbsp soy sauce
  • ¼ cup brown sugar
  • 2 Tbsp oyster sauce
  • 1-2 Tbsp sriracha
  • 1 Tbsp rice vinegar
  • 1 Tbsp canola oil
  • 1 lb sirloin, thinly sliced
  • 1 cup broccoli florets
  • 1 small red bell pepper, chopped
  • ½ large onion, chopped
  • 2 cups snow peas
  • ½ cup matchstick carrots
  • 3 green onions, sliced
  1. Cook spaghetti according to package directions; drain.
  2. Meanwhile, combine garlic, ginger, soy sauce, brown sugar, oyster sauce, sriracha, and rice vinegar in a medium bowl. Set aside.
  3. Heat canola oil in a large skillet or wok over medium-high heat. Add beef strips and saute until browned. Remove from heat.
  4. To same pan, add broccoli florets and add about 2 Tbsp water. Steam broccoli until crisp-tender. Remove from heat (you can add it to the beef strips).
  5. Add more oil to pan if needed, then add bell pepper and onion. Saute until crisp-tender. Add snow peas and carrots and saute for an additional 2 minutes.
  6. Add beef, broccoli, and noodles to bell pepper mixture. Stir sauce and pour into skillet. Toss to combine and coat noodles. Divide onto 4 plates, top with green onions, and enjoy!
