Chocolate Peanut Butter Cup Cookies

Ingredients
  • 1¾ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup butter, softened
  • ⅓ cup creamy peanut butter
  • ¾ cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup milk chocolate morsels
  • 25 miniature Reese's peanut butter cup candies, coarsely chopped and divided
Instructions
  1. Preheat oven to 350°F.
  2. In a medium bowl, combine flour, baking soda, and salt; mix well.
  3. Put chocolate chips in a microwave-safe dish and microwave until smooth, heating in 20-second intervals and stirring after each time.
  4. In a mixing bowl, beat butter, peanut butter, and sugar until creamy. Add egg and vanilla; beat well. Stir in melted chocolate; mix until well blended.
  5. Add flour mixture; mix well. Mix in all but ½ cup peanut butter cup pieces (I just "kneaded" them in with my hands).
  6. Using a cookie scoop, drop dough onto a baking sheet lined with parchment paper, placing about 2 inches apart. Roll into balls with hands, if needed.
  7. Press 7-8 pieces of candy into each scoop of dough, flattening balls slightly.
  8. Bake 18-20 minutes or until cookies are almost set and cracked on top. Cool 5 minutes on pan; transfer to cooling racks.
