Toasted Coconut Oatmeal Chocolate Chip Cookies

Ingredients
  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup packed dark brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1-1/2 cups flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 3 cups quick-cooking or old-fashioned oats
  • 1 cup coconut, divided
  • 1 11.5-oz bag milk chocolate chips
Instructions
  1. Preheat oven to 350 degrees.
  2. Beat the butter, sugar, brown sugar, eggs, and vanilla together until well blended.
  3. In a medium bowl, stir together the flour, baking soda, and salt. Slowly add to the butter mixture and mix until smooth.
  4. Stir in the oats, chocolate chips, and half of the coconut.
  5. Using a cookie scoop, drop teaspoonfuls of cookie dough onto a cookie sheet that is lined with parchment paper or that has been greased.
  6. Bake 10 minutes and turn oven to broil. Sprinkle cookies with remaining coconut and bake until cookies are golden and the coconut is browned.
  7. Let rest on pan for 5 minutes, then remove to rack to cool.
