Grilled Stuffed Chicken Cordon Bleu

Ingredients
  • SAUCE:
  • 2 Tbsp white wine vinegar
  • 1 Tbsp Dijon mustard
  • 1 Tbsp honey
  • 2 Tbsp olive oil
  • 1 Tbsp minced fresh thyme
  • CHICKEN:
  • 4 boneless, skinless chicken breasts
  • 4 oz. thinly sliced deli ham
  • 4 oz. Swiss cheese, cut into 4 blocks (like cheese sticks)
  • Dijon mustard
  • Salt and pepper
Instructions
  1. Prepare sauce: In a medium bowl, whisk together the vinegar, Dijon, and honey. Drizzle in oil, whisking until well combined, then add thyme, salt, and pepper to taste. Set aside.
  2. Preheat grill to medium-high.
  3. Cut a slit into each chicken breast by first inserting knife into wide end. Sweep the blade back and forth, carefully cutting the opening larger, being careful not to cut through end, top, or bottom.
  4. Wrap a slice of ham around each block of cheese and insert into chicken pockets.
  5. Coat each breast with Dijon, season with salt and pepper, and grill 5 minutes per side. To serve, drizzle vinaigrette over chicken.
