Fluffy Buttermilk Pancakes

Serves: 16-17 4" pancakes
Ingredients
  • 1-1/2 cups milk
  • ¼ cup white vinegar
  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 4 Tbsp butter, melted
  • 1 tsp vanilla extract
  • Cooking spray
Instructions
  1. In a medium bowl, whisk together the milk and vinegar. Set aside for 5 minutes.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. Whisk eggs and melted butter into milk and vinegar mixture. Stir in vanilla extract.
  4. Pour wet ingredients into dry ingredients and whisk until lumps are gone.
  5. Heat a large skillet or griddle over medium heat and spray with cooking spray.
  6. Pour ¼ cupfuls of pancake batter onto skillet and let cook until bubbles appear on surface of pancakes. Flip and cook until browned on other side.
  7. Continue until you've used up all the batter, every so often respraying the pan with cooking spray before pouring batter onto it.
