1 cup shredded Cheddar and/or Pepper Jack cheese (I did half and half)
4 strips bacon, cooked and crumbled
¼ cup chopped green onions
Instructions
Preheat grill to medium-high heat.
In a medium bowl, combine potatoes, olive oil, and Ranch seasoning, tossing to coat potatoes with Ranch.
Place potatoes in the middle of a large sheet of aluminum foil. Fold foil closed lengthwise and then fold sides to seal packet.
Grill for 9 minutes and then flip packet. Grill for an additional 9 minutes.
Remove from grill and carefully open packet. Sprinkle with cheese. With packet still open, put it back on grill and grill it for an additional 2 minutes until cheese is melted. Remove from grill.
Sprinkle with green onions and bacon.
