Southwestern BBQ Chicken Pizza

Serves: 8 pieces
Ingredients
  • 1 regular premade pizza crust
  • 2 cups cooked chicken, cut into bite-sized pieces*
  • ½ cup BBQ sauce
  • 1 cup black beans, rinsed and drained
  • 1 cup corn (about 2 ears)
  • 2 medium tomatoes, diced
  • 1 cup mozzarella cheese (or you can use cheddar or pepper jack)
  • 2 avocados, cut into chunks
Instructions
  1. Preheat grill to medium and prepare for indirect heat.
  2. Spread BBQ sauce onto pizza. Sprinkle pizza with the chicken, then follow with half of the black beans, tomatoes, and corn.
  3. Sprinkle evenly with cheese. Sprinkle with remaining black beans, tomatoes, and corn.
  4. Grill pizza on pizza stone for 12-15 minutes, or until crust begins to brown, cheese is melted, and veggies start to brown.
  5. Sprinkle with avocado and cut into 8 slices.
Notes
*I don't always have cooked chicken on hand and I really don't like to have to cook some before making an easy recipe like this. So I just buy a frozen bag of precooked, grilled chicken strips and zap them in the microwave. Easy peasy!
