1 jalapeno, seeded and chopped (I just chopped up 5 rings from a jar of jalapenos)
2 lbs boneless beef chuck roast
Instructions
Combine all ingredients in slow cooker and stir well to combine. Cook on low for 6-1/2 to 7 hours.
Remove beef to cutting board. Using 2 forks, shred the beef.
Return the beef to the slow cooker and stir it into the juices to heat it. Serve it on tortillas with sauteed onions and bell peppers, fresh corn, cheese, salsa, lettuce, cilantro, or any of your favorite taco toppings.
