Easy Sweet and Sour Chicken

Ingredients
  • SAUCE:
  • ½ cup ketchup
  • ¼ cup lemon juice
  • 2 Tbsp rice vinegar
  • ½ cup crushed pineapple in juice
  • ⅓ cup brown sugar
  • 1 tsp garlic
  • STIR-FRY:
  • 3 Tbsp canola oil, divided
  • 1 lb. boneless skinless chicken breasts, cut into bite-sized pieces
  • 3 Tbsp flour
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • ½ large onion, cut into wedges
  • 1 red bell pepper, diced
  • 3 celery ribs, sliced
  • ½ cup shredded carrots
  • Scallions, sliced, for topping (I used 3)
  • Hot cooked rice
Instructions
  1. Combine sauce ingredients in a medium bowl and set aside.
  2. In a large ziploc bag, combine chicken, flour, salt, pepper, and garlic powder. Shake and toss well to coat chicken.
  3. In a large skillet over medium-high heat, heat 2 Tbsp canola oil. Add chicken and cook until evenly browned on all sides. Remove from heat.
  4. Heat remaining 1 Tbsp oil in same skillet and add onions and peppers. Saute until crisp-tender, then add carrots.
  5. Return chicken to skillet and toss with veggies to combine. Whisk sauce and pour into skillet. Bring to a boil and cook chicken and veggie mixture in sauce until heated through.
  6. Serve over white or brown rice and sprinkle with scallions.
