Cajun Grilled Red Potatoes

Ingredients
  • 6 large red potatoes
  • 2 Tbsp olive oil
  • 1 tsp minced garlic
  • ½ tsp kosher salt
  • ½ tsp Cajun seasoning
  • Parsley, chopped (optional)
Instructions
  1. Preheat grill to medium-high.
  2. Wash potatoes and pat dry. Place potatoes in microwave (I just put mine on a paper towel) and cook for 4 minutes.
  3. Remove and allow to cool until cool enough to handle. Cut each potato in half or thirds to create uniform pieces.
  4. Place potatoes in a medium bowl and toss with olive oil, garlic, salt, and Cajun seasoning to coat evenly.
  5. Grill potatoes for 5 minutes. Turn potatoes over and cook for an additional 5 minutes, then another 5 minutes on each side until fork-tender.
  6. Remove from grill and sprinkle with fresh parsley. Eat them as is or serve them with ketchup or your favorite fry sauce!
