Creamy Mac and Cheese with Sriracha

Ingredients
  • 2 cups elbow macaroni
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1-1/2 cups half and half
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 cup shredded cheddar cheese
  • 3 wedges Laughing Cow Swiss cheese
  • Cubed, cooked chicken (optional)
  • Sriracha sauce, to taste
Instructions
  1. Cook pasta according to package. Drain.
  2. In same pot, melt butter over medium heat. Add flour and whisk until combined. Slowly add half and half, bring to a boil, and stir until thickened, about 2 minutes.
  3. Turn heat to low, add cheeses, and stir until cheeses are completely melted.
  4. Add pasta and stir until noodles are well coated.
  5. Separate mac and cheese into four plates, top with cooked chicken (optional), and drizzle with Sriracha.
