Ingredients
  • 1 pkg rotini noodles (or pasta of your choice)
  • 1 14.5-oz can diced tomatoes, undrained
  • ½ cup balsamic vinegar
  • 2 tsp Italian seasoning
  • ¼ tsp red pepper flakes
  • 1-1/2 Tbsp olive oil
  • 1 lb chicken boneless, skinless chicken breasts or tenderloins, cut into bite-sized pieces
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • ½ yellow onion, thinly sliced
  • 1 8-oz pkg sliced mushrooms
  • Hot cooked noodles
  • ¼ cup fresh snipped basil
Instructions
  1. Cook pasta according to package directions until al dente; drain.
  2. Meanwhile, combine tomatoes, vinegar, Italian seasoning, and red pepper flakes in a medium bowl. Set aside.
  3. In a large skillet over medium heat, heat olive oil. Add chicken and saute until lightly browned. Sprinkle with garlic powder, salt, and pepper.
  4. Add onions and mushrooms to pan and saute until vegetables are crisp-tender.
  5. Add tomato mixture and reduce heat to low. Simmer until chicken is cooked through. Serve over noodles and sprinkle with basil.
