BBQ Chicken Salad

Serves: 2 salads
Ingredients
  • 1 large head romaine
  • 2 cups cooked, cubed chicken (I used Tyson frozen grilled precooked strips)
  • ½ can corn kernels
  • ½ can black beans, rinsed and drained
  • 4 green onions, sliced
  • ½ cup cherry tomatoes, halved
  • ¼ cup shredded Mexican blend cheese (or preferred shredded cheese)
  • Cilantro for garnishing
  • Tortilla strips for garnishing
  • Ranch dressing
  • BBQ sauce
Instructions
  1. Divide romaine equally onto two plates. Top each with chicken.
  2. Sprinkle with corn, black beans, green onions, and cherry tomatoes.
  3. Sprinkle each with ⅛ cup cheese, then top with cilantro and tortilla strips.
  4. Drizzle each salad with Ranch dressing and BBQ sauce. Enjoy!
