Ingredients
  • 12 no-bake lasagna noodles
  • 1 lb. ground mild Italian sausage
  • ½ medium onion, diced
  • ½ bell pepper, diced
  • 2 gloves garlic, minced
  • 1 Tbsp Italian seasoning
  • 1 24-oz. bottle spaghetti sauce
  • Salt and pepper to taste
  • Cayenne pepper or crushed red pepper flakes (optional)
  • ¾ cup ricotta
  • 1 egg
  • 1 cup Parmesan, divided
  • 1-1/2 cups mozzarella
  • 1 Tbsp olive oil
  • Olive oil spray
Instructions
  1. Preheat grill to medium.
  2. In a large skillet over medium-high heat, brown sausage. Add onion and bell pepper and sauté for 2 minutes. Add garlic cloves, Italian seasoning, spaghetti sauce, salt and pepper, and cayenne or crushed red pepper flakes. Reduce heat to low to simmer.
  3. In a small bowl, combine ricotta and egg until smooth.
  4. In a medium bowl, stir ½ cup Parmesan, mozzarella, and olive oil until combined.
  5. Lay out 4 double-layer sheets of foil. Spray with olive oil spray.
  6. Run each noodle under cold water and set on a plate.
  7. Place one noodle on each piece of foil. Top with rounded ¼ cup of meat sauce. Add 3 small dollops of ricotta/egg mixture and spread to combine with meat sauce. Sprinkle with ½ of cheese mixture. Top with another noodle. Repeat layers and top last noodles with remaining meat sauce and ½ cup Parmesan cheese.
  8. Bring the foil together for each packet, and pinch and fold tightly to make 4 flat packets.
  9. Grill packets, uncovered, for 10 minutes per side. Let stand for 5 minutes before opening.
