Preheat oven to 350 degrees. Grease an 8x4x3-inch loaf pan. (I use softened butter and just spread it with a paper towel.)
In a small bowl, combine lemon juice and milk. Stir to mix well. Set aside.
In an electric mixer, cream together the butter and sugars until smooth. Add eggs and mix until fluffy. Mix in lemon juice mixture, bananas, and vanilla.
In a medium bowl, combine dry ingredients. Add flour mixture to wet ingredients and mix well.
Add coconut flakes and mix until flakes are fully incorporated.
Pour into prepared loaf pan and bake for one hour or until toothpick inserted comes out clean. Do not over bake!
