Parmesan-Roasted Broccoli and Cauliflower

Ingredients
  • 1 small head broccoli, cut into large florets
  • 1 head cauliflower, cut into large florets
  • 3 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 2 tsp minced garlic (2 cloves)
  • Sea or Kosher salt, to taste
  • ¼ cup grated Parmesan
Instructions
  1. Preheat oven to 425 degrees. Spray a 9x13 cookie sheet with cooking spray.
  2. Place broccoli and cauliflower on pan. Drizzle with olive oil and lemon juice and sprinkle with garlic and salt.
  3. Toss the vegetables to coat with oil and lemon juice (I just used my hands).
  4. Arrange in a single layer on the baking pan.
  5. Bake for 10 minutes, flip veggies, and bake for an additional 12 minutes. Remove from oven, sprinkle with Parmesan, and serve.
