Ingredients
  • ½ cup chicken broth
  • ¼ cup soy sauce
  • 2 Tbsp sugar
  • 1 Tbsp creamy peanut butter
  • 2 tsp cornstarch
  • 2 tsp sesame oil
  • ¼ tsp crushed red pepper
  • 8 oz. ground pork
  • ½ tsp powdered ginger
  • 2 garlic cloves, minced (2 tsp)
  • ½ 14-oz pkg coleslaw mix
  • 1 bell pepper, chopped
  • ½ large yellow onion, chopped
  • 3 green onions, sliced
  • Salt and pepper to taste
  • 1 9-oz pkg fresh fettuccine
Instructions
  1. In a small bowl, whisk together the broth, soy sauce, sugar, peanut butter, cornstarch, sesame oil, and crushed red pepper. Set aside.
  2. Heat a large skillet over medium-high heat. Add pork, ginger, and garlic and cook until pork is browned, about 6 minutes. Transfer pork to a bowl.
  3. In same skillet, cook coleslaw, stirring frequently, for about 3 minutes. Add bell pepper and onion and continue cooking until coleslaw is lightly browned.
  4. Meanwhile, cook fettuccine in a stock pot according to package directions.
  5. Return pork to skillet. Stir in broth mixture and heat to boiling. Reduce heat to medium and simmer, uncovered, until sauce has thickened slightly, about 2 minutes.
  6. Drain fettuccine and combine with pork. Sprinkle with green onions and serve.
