Ingredients
  • 8 oz elbow noodles
  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 tsp garlic, minced (about 2 cloves)
  • 1 packet taco seasoning
  • 14.5-oz can diced tomatoes
  • 8-oz can tomato sauce
  • 15.25-oz can black beans, drained and rinsed
  • 1 can green chilies, drained
  • 1 can corn, drained
  • Salt and pepper to taste
  • 1 Tbsp Worcestershire
  • Shredded Fiesta blend or cheddar cheese
  • Jalapeno rings (optional)
Instructions
  1. Cook noodles according to package directions until al dente; drain.
  2. Meanwhile, in a large skillet over medium-high heat, brown the ground beef. Drain grease.
  3. Add onion and garlic and saute about 2 minutes.
  4. Stir in taco seasoning, diced tomatoes, and tomato sauce. Bring to a simmer.
  5. Add black beans, green chilies, corn, salt and pepper, and Worcestershire. Simmer for 3 minutes.
  6. Stir in elbow noodles and toss until fully incorporated.
  7. Serve in bowls and top with shredded cheese and jalapeno rings, if desired.
