¾ cup shredded cheddar or shredded cheese blend of choice
1 cup panko bread crumbs
1 tsp garlic powder
½ tsp preferred seasoning blend
¼ tsp dried parsley
Salt and pepper to taste
1 egg
Leftover gravy or cranberry sauce or ketchup or BBQ sauce
Instructions
Preheat oven to 400 degrees. Line a baking sheet with foil and lightly spray with cooking spray.
In a medium bowl, mix mashed potatoes and shredded cheese together (I just used my hands).
In another bowl, combine panko, garlic powder, seasoning blend, parsley, and salt and pepper.
In a small bowl, beat the egg.
Roll mashed potato mixture into golf ball-sized balls, then dip each one into the egg mixture and then the panko mixture. Sprinkle panko over tops of each ball and gently press to make sure crumbs adhere to each ball.
Place balls in prepared baking sheet and lightly spritz with cooking spray. Bake for 5 minutes, turn and spray, and bake for an additional 5 minutes.
Turn oven to broil and bake until balls are golden, turning as necessary and watching closely to make sure they don't burn. Remove from oven, serve with gravy, cranberry sauce, ketchup, or BBQ sauce and enjoy!
