Ingredients
  • ¼ cup butter
  • ¼ cup olive oil
  • 3-4 tsp minced garlic
  • 1 red, orange, or yellow bell pepper, julienned
  • ½ red onion, thinly sliced
  • 1 lb. frozen, cooked large or jumbo shrimp
  • Juice of 1 lemon
  • ½ cup chicken broth or white wine
  • ¼ tsp oregano
  • Red pepper flakes, to taste
  • Pepper, to taste
  • ¼ cup panko bread crumbs
  • ¼ cup chopped fresh parsley
  • Cooked angel hair pasta
Instructions
  1. In a large skillet over medium-high heat, combine butter and olive oil. Add garlic and saute until garlic is fragrant.
  2. Add bell pepper and red onion and saute until vegetables are crisp-tender.
  3. Add shrimp, lemon juice, chicken broth, oregano, red pepper flakes, and pepper and toss to combine. Allow to heat through.
  4. Heat oven to broil. Pour shrimp mixture into a 13x9" baking dish. Add Parmesan and panko and toss to combine. Broil 2-3 minutes or until heated through. Remove from oven.
  5. Serve over pasta and sprinkle with parsley. Enjoy!
