Peanut Pork and Noodles

Ingredients
  • 1 pkg ramen or yakisoba noodles
  • 2 tsp cornstarch
  • ½ cup water
  • ¼ cup creamy peanut butter
  • 2 Tbsp soy sauce
  • 1 Tbsp honey
  • ½ tsp garlic powder
  • ⅛ tsp ground ginger
  • 1 lb boneless pork chops or pork tenderloin, cubed
  • 3 tsp sesame oil, divided
  • 1 cup baby carrots, sliced
  • 1 medium onion, halved and sliced
  • 1 cup sugar snap peas, sliced
Instructions
  1. Cook ramen according to package directions or prepare yakisoba noodles in microwave for stir-fry method.
  2. In a small bowl, combine cornstarch and water until smooth. Whisk in peanut butter, soy sauce, honey, garlic powder, and ginger. Set aside.
  3. In a large skillet or wok coated with cooking spray, stir-fry pork in 2 tsp sesame oil until no longer pink. Remove and keep warm. Add remaining 1 tsp sesame oil to skillet and saute carrots, onions, and sugar snap peas until crisp-tender.
  4. Stir sauce and add to pan. Bring to a boil, stirring constantly, until thickened (about 2 minutes).
  5. Add noodles and return pork to pan. Stir and cook until noodles are heated and sauce coats everything evenly. Enjoy!
