Chipotle Chile Corn Saute

- 1 Tbsp butter
- ½ medium onion, chopped
- ½ red bell pepper, chopped
- 2 garlic cloves, minced
- 4 cups frozen, canned, or fresh corn kernels
- ¼ tsp chipotle chile pepper
- ½ tsp chili powder
- In a medium skillet over medium-high heat, melt butter.
- Add bell peppers and onions; saute until crisp-tender, stirring frequently.
- Add remaining ingredients and toss to to combine. Saute until corn is crisp tender. Enjoy!
