Combine all ingredients except for wrappers in a mixer and mix until well combined.
Fill a small bowl with water and set aside. Place 2 tsp of chicken mixture in the center of a gyoza wrapper. Dip your finger in the bowl of water and moisten the perimeter of the wrapper.
Pinch wrapper ends together and place on a parchment paper-lined cookie sheet.
Heat about 2 Tbsp canola oil in a large skillet over medium-high heat. Carefully place potstickers, seam side up, in the oil and fry about 2 minutes, or until golden brown on the bottom.
Carefully pour ⅓ water in the pan (it will steam) and cover the pan. Steam an additional 2 minutes.
Remove potstickers from pan and place onto a cookie sheet lined with paper towels. Serve with blue cheese or ranch dressing and enjoy!
