2 cups uncooked penne pasta (or small noodle of your choice)
1 egg, beaten
¼ cup milk
2 Tbsp grated Parmesan cheese
8 oz ground Italian sausage
1 small onion, chopped
2 cloves garlic, minced
1 bell pepper, cut into 2-inch strips
4 oz sliced mushrooms
1 14.5-oz can petite diced tomatoes, undrained
½ tsp Italian seasoning
¼ tsp crushed red pepper
1 cup shredded mozzarella cheese
⅓ cup mini pepperoni
Instructions
Preheat oven to 350 degrees. Lightly grease a square baking dish and set aside.
Cook pasta according to package directions. Drain and rinse with cold water; drain again.
In a large mixing bowl, combine the egg, milk, Parmesan cheese, and pasta. Spread pasta mixture evenly in the square baking dish. Bake at 350 degrees for 20 minutes.
Meanwhile, in a large skillet, brown sausage; drain. Add onion, garlic, bell pepper, and mushrooms. Saute until vegetables are crisp-tender. Stir in diced tomatoes, Italian seasoning, and crushed red pepper.
Spoon sausage mixture over pasta. Sprinkle with mozzarella cheese and mini pepperonis. Bake 10-20 minutes or until heated through and cheese is melted. Enjoy!
