Caramelized Onion and Garlic Baked Mashed Potatoes

Ingredients
4 lbs red potatoes, cut into 2-inch pieces
Salt, to taste
1¼ cup warm buttermilk (just zap it in the microwave for 30 seconds or so)
½ cup warm milk (you can warm it with the buttermilk)
¼ cup butter
½ tsp pepper
1 tsp salt
1¼ cup grated Gruyere cheese
1 cup caramelized onions, chopped
4 tsp minced garlic (about 4 cloves)
2 Tbsp fresh parsley, chopped (and extra for garnish if desired)
Instructions
Put potatoes in a large stock pot and cover with water. Sprinkle desired amount of salt into water and bring to a boil over medium-high heat; boil 20 minutes or until tender. Drain.
Return potatoes to pot and mash to desired consistency. (Note: you can put them in a large electric mixer to mash them instead. Just know that the standard mixer bowl will get pretty full). Stir in buttermilk, milk, butter, pepper, and salt until well blended and butter is melted.
Stir in cheese, onions, garlic, and parsley. Spoon mixture into a 2½-quart greased baking dish and bake at 350 degrees for 35 minutes. Top with additional parsley, if desired.
