Spicy Chicken Corn Chowder

Ingredients
  • 2 chicken breasts, cut into bite-sized pieces
  • 2 Tbsp canola oil
  • 5 slices bacon, chopped
  • 1 onion, chopped
  • 1 jalapeno chile, seeded and finely chopped
  • ½ tsp cayenne pepper
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 cups chicken broth
  • 2 cans corn, drained
  • 2 15-oz. cans creamed corn
  • ½ cup half and half
  • Cilantro, for garnish
Instructions
  1. Heat oil in large saucepan over medium-high heat. Add chicken and cook, tossing often, until cooked through. Remove chicken to a bowl and cover to keep warm.
  2. In same pot, cook bacon over medium-high heat until crisp, 5 to 7 minutes. Transfer to a paper towel-lined plate.
  3. In same pot, saute onion, jalapeno, cayenne, salt, and pepper in bacon fat over medium-high heat until onions are softened, 4 to 5 minutes.
  4. Add broth, corn, and creamed corn and bring to boil. Simmer over medium heat until slightly thickened, about 5 minutes.
  5. Stir in half and half, bacon, and chicken and heat until warmed through. Season with salt and pepper. Spoon into soup bowls and garnish with cilantro.
