Mexican Sloppy Joes are a quick and easy weeknight meal your whole family will enjoy!
Hola, mis amigos! And there you have it. That’s about all I remember from my Spanish 101 class. Money well spent, my friends. Even though I haven’t mastered the Spanish language, I certainly enjoy Mexican food. Crispy chips, fresh salsa, beans, rice, burritos, chimis…what is not to love?
So the idea of amped up sloppy joes with a Mexican flair are right up my alley. If you like Mex cuisine like I do, you’ll love these Mexican Sloppy Joes (a.k.a. Sloppy Joses). Mexican-spiced ground beef and black beans piled high on a hamburger bun and topped with cheese and jalapenos. Sloppy never looked so good, Baby! These delicious and hearty sandwiches are simple and quick to make for a weeknight meal you can have ready in less than 30. Fork and knife optional…though strongly recommended.
- 2 Tbsp cumin
- 1 Tbsp chili powder
- 2 tsp garlic powder
- ¼ tsp salt
- 2 Tbsp brown sugar
- 1 medium yellow onion, diced
- 1 lb. ground beef
- 1 Tbsp flour
- 1 10.75-oz can tomato puree
- 1 Tbsp cider vinegar
- 1 15-oz can black beans, drained
- 1 4-oz can diced green chilies
- 1 Tbsp salsa verde
- 1 Tbsp diced jalapeno
- Shredded cheddar or pepperjack for topping
- Jalapeno rings for topping
- 6 hamburger buns
- In a small bowl, combine cumin, chili powder, garlic powder, salt, and brown sugar. Set aside.
- In a large skillet coated with cooking spray, saute ground beef over medium-high heat until browned. Drain grease and add onion. Continue to cook until onion is translucent.
- Add flour to mixture and combine. Stir in tomato puree, cider vinegar, black beans, green chilies, salsa verde, diced jalapeno, and cumin mixture. Reduce heat to medium-low and simmer beef mixture for 10 minutes, stirring occasionally.
- Remove from heat. Top each bun with beef mixture, cheese, and jalapeno rings.

Thanks, Jen! I don’t think I can ever go back to regular sloppy joes. These are just too good. And SO easy!

When do you add the spices to the meat? It does not say in the instructions.

Oh, good catch! It would be in step 3, when you add the tomato sauce, beans, etc. I’ve updated the recipe so it’s correct now. Thanks for letting me know!
